Check with cole parmer they sell many types of probes at different prices it will be the largest expense of your project
You can also bid on probes at Labx.com but be careful many sellers take your money but dont send the product...

You could get tube like that from a machine shop or mill supply store
reamers and drills come in tubes like that
you could cut a piece of strip board the size you need you can buy it from mouser futurlec or digi-key
As you have stated with disposable electronic products and the global economy such as it is I would think one would need to be exceptional to get ahead in the electronics field probably better just to have it as a hobby I hope I'm not being too pessimistic about this

I made both the stethoscopes the one with the 5 741 op-amps doesnt work at all but the stehoscope2 by Audioguru works really well. I took it to class and all the students liked it. It is much easier to listen to a heart beat than with an accoustic stethoscope
