I have been playing around with a couple of power supplies that are similar to the 0-30 Vdc @ 2.5A here and a fair number of simple LM317HVT units, ( it is amazing how these are so simple to make and use).
By the time you add decent Amp and Volt meters like http://www.electronics-lab.com/projects/test/007/index.html it can become quite a use full PS, but is bit on the pricey side of thing.
Also a bit of googling brought up a excellent sample PS at http://www.tuxgraphics.org/electronics/200707/bench-power-supply-unit.shtml
So I am setting out to use make a new one. It will be AVR Mega88 based and use a MCP4922 as the Voltage source.
A 16x2 LCD will show both Voltage and Current setting.
The unit will use a single rotary encoder for Voltage and Current setting.
There will also be 3 push buttons:
As I go I will try and keep things updated and would welcome comments.
