Seeking advice on new iron/handle for old soldering station (thermocouple sensor type)

The old Dick Smith Electronics (DSE) T-2000 looked very similar. They operate on 24v (not sure about your AC part though) and are 48w as far as I know. Some parts are still available but you would need to search.(expensive to boot) but they do last a long time. Stlll use one here. There are...

Want to make a box that will open at a programmed time.

Being a dog, they can be quite aggressive (in a nice way) when it comes to food. I'd imagine under those circumstances that anything with a hinged lid would last about as long as it took to feed the first time. I'd be thinking more along the lines of a sliding lid like say in the olden day...

Using mosfet to switch 12V to a load with a hard ground.

I'd be inclined to trace terminals 1 and 2 on the horn switch and place a standard voltage free set of relay contacts across there. That retains all the original inbuilt wiring and control mechanism without any possibility of feedback or "strange effects" which can happen when you start fooling...

Using mosfet to switch 12V to a load with a hard ground.

I doubt your expected circuit is correct. Auto wiring to the horn (and other equipment) is normally earth return. i.e. power is applied to the horn (or other equipment) and the ground is taken to the slipring on the steering wheel. Those that use a relay would be similar.

    My speakers stopped working

Working on smps require quite a bit of knowledge in that area along with an amount of testing equipment. You don't say what you have let alone whether you have a circuit diagram or not and whether or not you can read and apply a circuit diagram. The latter would be essential. What voltage is...

500VDC/20A static IGBT switch high side gate driver with charge pump - 3.3V Vcc

I don't see any need for a driver other than whether or not the specs for your particular device is rated for 3v3 logic level. Couldn't see any spec sheet on Google for your quoted device.
