    Unfortunately with out a definite test we do not know what happens when it operates on overheat, but with only three terminals used, Just two of the wires should work as the supplier mentions. Unless you do a little tracing or reverse engineering it would be a question of trial and error to see...

    Use the sensor to switch a relay with the capacity for the motor. If open collector sensor then it can drive a small relay direct. M.

    It is possible it was double throw, IOW had a common and N.C. & N.O. What does it indicate with a meter? If it has a N.O. it could be used for alarm etc. M.

    That controller is for a 3ph motor only and is very low quality. 1ph induction motors do not run off of variable frequency control due to drop out of run at low rpm or on load.     Also as to the 120v control transformer, it is usually recommended you set up a 'local' neutral as shown in the NFPA79 typical diag. One of the secondary terminals should be earth grounded right at the secondary and connected to the service ground. The neutral is taken from this point. M.
