    The usual solution to connect wires to a PCB without a connector is a terminal. Take a look at the ones in this search that have a 2.54mm (0.1") pitch as they'll fit your protoboard. You can bus your terminals together with jumpers on the PCB or in the terminals themselves.

    It's a header. The short side solders to a PCB and the long side usually goes to a female connector. You will not have good results trying to solder wires to it. If you try, the plastic part will melt, the solder on the PCB will melt and the pins will topple over.

    You've only shown us information on the Astrocom half of the problem. Unless you show us the David Clarke side or someone here happens to be an expert, this is not enough. As an aside, headset manufacturers often offer for sale, at exorbitant prices, adapters to various other systems.

    It's a mechanical incremental rotary encoder. They can be had for as little as $7 new. It has 24 detents and is a PCB mount type. The resolution is unknown. TTC is a Chinese manufacturer. If there's no model number, you probably could only source from the OEM (maker of the oven) or by parameter.

    If it's a remote control for a garage door opener, make sure the antenna wire on the unit is intact and hanging straight down. It's helpful on this forum if you state specific brands and model numbers where possible.
