    "using AC power would require a cord running across a kitchen counter top. Got enough of that already" If the indoor unit is battery powered, why not just move it to a more convenient location near an AC outlet to allow an AC/Battery alternate power source?

    Unless the strip is an "absolute" position encoder, you still have to relocate the origin on power-up.

    No. The dielectric is an insulator. Well, the two plates of a capacitor in this case case must be insulated. The dielectric constant of the electrode insulation and that of the liquid and air determine the capacitance sensed.

    VFDs are generally designed to drive a 3-phase motor. That blower is a single phase motor. The internal speed control is likely a thyrister control similar to lamp dimmers.

    Per Audioguru's advice, this a version of a water level indicator circuit that I've used several times. Take the 4093's outputs to your Arduino's inputs. But don't know about sanitizers conductivity.

    If it is for point to point on a donut pad perfboards, I'd use 30ga wire wrap wire. Easy to use either insulated or stripped. If you go this way, get a good stripper that works down to 30ga. Several colors are nice but not really necessary. I do almost all my prototypes this way.

    I just realized that the AR2 has a display. So, I must have the AR1. I added a sawtooth voltage in place of the tuning pot, and fed the audio to the X on a scope and the sawtooth to the Y. It made a nice, crude spectrum analyzer. :) Ken
