There are temperature transducer ICs available.
An ordinary silicon diode has its forward voltage drop about 3mV for each degree C rise in temperature.
PTC resistor.
NTC resistor.

Let me tell you about two of my favorite temperature sensors.

The LM334 is a programmable current regulator.  It is nominally a three pin device that is commonly available in TO-92 package.  This varies current linearly with respect to temperature on the kelvin scale.

The LM335 is a temperature sensitive voltage reference.  It is also a three pin device in a TO-92 package.  Usually only two pins are used, the third is available for trimming.  The voltage is 10mV/kelvin.

Both are available in TO-46 packages as well, which includes broader operating range and usually tighter tolerance.
