The MB6S datasheet has a "Junction to Lead, per leg" and a "Junction to Ambient, per leg" parameter.

Do I need to multiply these parameters by 4 (accounting for each leg) when using them in my calculations? For instance, when I'm solving for junction temperature.

You need to calculate the power in each leg and then use that to determine the total rise in temperature due to each leg's thermal resistance.
If each diode in the bridge carries identical currents, than you can just calculate the thermal temperature rise for one and multiply by 4.
