why does a p-channel JFET differ from an n-channel JFET?

what is the difference between them?

One is made with p doped semiconductor (a P channel) and the other with N doped semiconductor (N channel)

Other than the polarity being reversed, the differences are minor and have to do mostly with the physics of the doping process and subsequent carrier mobility.
