What exactly is the difference between these two omron relays?

I would recommend that if you have a pcb that you spray it with some sort of conformal coating on both sides. Dust and moisture can create conductive paths. Even spraying it with a clear acrylic may be sufficient.

Planning to put https://www.arrow.com/en/products/422b-55ml/mg-chemicals on both sides of the PCB after soldering. Would be enough isn't it? @(*steve*)

no, but if you are trying to switch signal, you should be using a thyristor, in a circuit with a small relay, rather than a power circuit with a solenoid.
