    I would make pressure switches control the start/stop commands and not disconnect line power to the drive. For safety you can add a high pressure switch to kill power, but use your 4-5 bar PS for the forward enable cmd. Then put your Acc/Dec back to about 0.5s to limit current.

    I would be careful about the type of wire your using. 18 awg wire with pvc insulation is only rated for 7 amps. 18 awg wire with a higher temperature rating such as Thhn insulation is good for up to 16 amps. Make sure you are not using a fuse larger than the ampacity of the wire you have.

    Any size will work provided it physically fits. As long as ratings are met or exceeded. The spacing of leads (pitch) is more important than the diameter so it can be inserted down through the holes without excess lead exposure. You may of had a 500v rating which is close to 10mm diameter.

    You don't have insulation on the wires. Likely shorting when you push wires in cavity. You can use much smaller gage and it's fine. Try taping or insulating the wires.

    Some doorbell chimes require a diode that passes a small dc current while the button is off. Either way you should briefly hear a sound when the push button is held in.

    This is the real problem here. Unfortunately not everything can be idiot proof. I agree with Harald. Place the MOV across the load. You can add a snubber across the relay contacts if you want, but a MOV won't do anything.
