Swapping the battery for a DC source is easy as you already tried.
The switch is only momentary. You could try jumping the switch contacts but the unit might just power off.

Once in the metal box, there has to be either a short or open circuit somewhere if it works outside the box.
If @Harald Kapp 's idea shows no short without battery connected, perhaps you have the PCB sitting on the battery shorting the circuit?

You can sometimes check caps in circuit but it's best to check out of circuit. I use my solder vacuum pump and clean one leg which takes it out of circuit. Much quicker than...
Knowing the secondary voltage is pretty much impossible without stripping the transformer and counting turns.
You might get an idea by looking at near by components where the secondary connections are. ie - caps.

You have lots of different threads. Very confusing.
The schematic shows a 25V filter cap after the bridge rectifier suggesting the secondary to be low voltage. Probably between 10V and 16V.

Do you have the donor laptop?
You could (painfully) use the original connector and make your own breakout board.
Failing that, you'd be better off scraping the ribbon/flat cable and soldering to it.

If you are correct about "over current", that suggests a short somewhere. But I would expect the main fuse to blow under a short condition.
Out of curiosity, did you check the new mosfets before installing them? There are many fakes around.
I would be inclined to replace the original ones and...
Are you sure you should be playing with 240 volts? It doesn't seem like you should from your questions.

IMHO, the power supply voltages should have been checked first.
Perhaps you should put the old mosfets back and partially assemble to get those measurements.
Did you use the correct mosfets and put the pairs in correctly?

The illuminated switch will have max voltage and max amps printed on it (hopefully).
The terminals should be numbered 1,2 and 3 or A,B and C (hopefully).
The internal LED will have a current limiting resistor for the given Maximums.
