I've checked all my suppliers and can't find any 2000uf electrolytic caps in
30volt or 35volt. Any help or suggestions appreciated.

Why just 2000uF? I think it doesn't has diffusion, and is very rare to find.
Why don't you use 2200uF?

Use a 2200 uF. This is very common, and is used often. These caps have about
a 20% tolerance. You can vary the value by a fair extent, and it will work.
I am assuming this is a filter cap. If so, you can probably go to a 3300 in
most cases, if it will mechanically fit.

If you want to be exact, and you have the space, you can put 2 of 1000 uF
caps in parallel.
