Wireless controller to vary speed of a 240v AC pillar motor

I am a greyhound trainer.

I have a pillar/capstan dog walker connected to to 240v AC power supply

I'd like to be able to vary the speed of the dog walker and also have a dead man's switch

Any ideas?
