What are the best ways of securely attaching wires to batteries? Maybe some methods using electrodes?

If you're very careful you can solder to them.

However I prefer to use battery clips and/or battery holders.

There are lots of different kinds of batteries and you did not say which type.
Car battery, AA or AAA alkaline cylindrical cells, button cells, Lithium-Ion cells or Li-Po cells.
Most fit in a battery holder.

From your initial query it appears you are unfamiliar with many aspects of electronics. It would be a very good move on your part to do some online reading on the use of and the protection equipment necessary with LiPo or with LiFe cells. Any battery can be dangerous at times but these type more-so if handled incorrectly.

Dual spot weld nickel plated tabs to the batteries then solder the wires to the tabs.

Buy batteries with leads attached. If using LiPo's there is a multitude of them on the model plane / car / boat market.
