Adjustable Current Limiting for Power Supply

I an rebuilding the bench after a few years away (last time it was all heathkit stuff).  One thing that i find i need is a power supply that allows adjustable current and voltage output.  Far too many time i have let the magic smoke out of design, usually because of a stupid mistake.

I have seen scads of lm317 circuits, as well as people who have re-purposed computer power supplies - but both of these options are not what i want - since they can supply many hundreds of milliamps or 10s of amps to a first time circuit if they are not current limited.

I suspect an old standby of lm723 and a 2n3055 is what i want - the latter i found at radio shack in a to220 case  that should be plenty of power for the simple low power circuits around today.

i have yet to google a circuit for the 723 that allows adjustable current.  That would solve my need instantly.
