    If I were you. I will place a buffer ic or transistor between pic output and R2. This is to protect your expensive PIC if Mosfet got shorted. But you you need to program to invert output for diving the buffer or transistor. I'm not sure about the value of R2. It should be lower value.

    Your circuit diagram was correct. If you can set your 1000 ohms to 750 ohms. You should have 5.51V as output. Can you post picture of LM317 and connecting wire. Pls label wire for Input, Output and Adjust wires. There might something you missed.:)
