    This is due to the "sampling time" of the processor that reads and displays the value. You might be able to slow the processor down - depends on the way it's been designed. Got a schematic or a picture of the insides?

    Not sure how relevant it may be but Dave over at EEVBlog has an article on getting your own LCD manufactured. It's not as expensive as many would think and if you bought a 'minimum' quantity you may find the surplus getting you a profit from others with similar issues.

    A lot depends on how you use the sensors - you could use light-based sensors to detect plastic (of the clear/translucent variety) and magnetic for 'some' metals. Define the method you want to use first - then find the sensors to fit.

    If you use the wire/crimp ring repair, make sure the wire is thick enough to carry the current. That terminal strip looks 'good' for around 15A so you'll want at least 1.5mm2 wire on the crimp.
