    No, one may be able to get a higher voltage due to less losses by using a schottky, but the available power output of the transformer remains the same.

    power out is equal to power in less any losses no matter how you connect it using all outputs. Also note transformers output ac not dc.

Seems to be heavy leads connected to some kind of isolator but nothing on the alternator output pins.?? How about a sketch of the wiring you have done..?? Half of the info will get only half an answer...

    Can be done but to start with it would be much easier with and external regulator. You would need an understanding of the operation of the alternator and be able to sort out the regulator wiring. Then make up a controller to manually control the rotor input.

    Output would be limited by whatever load you have connected. I'd say you have something connected up a-about or the alternator is cactus.

    SD card easy but you will need some kind of microcontroller, unavoidable for most applications. Arduino probably the most covered by internet examples so next to nothing to work out, just wire up and load a working and proven program. Easier than falling off a log.

    Yes, but if using AC, then you need phase or thermostatic control, not pwm. If on DC, then again, thermostat control would be much simpler and argueably, cheaper as well.

    The ratio reduction I referred to wasn't necessarily "gears" as such. It is basically a term for ratio reduction. i.e. gear-up, gear-down, in top gear etc.

    Yes. Leave all existing gear in place and gear down the drive mechanism by 50%. Much like starting a car in first gear instead of top gear. I wouldn't imagine high speed would be a factor in covering or uncovering a pool.
