    I wouldn't use a relay because they are very slow at opening and closing compared to the AC signal you'll have coming in. So the relay may just chatter a lot instead of switching on. A SCR might be a better option. You can do it with a relay if you want, just not directly.

    The odd thing is there should be a Neutral (grounded) terminal next to it. There is a possibility that L is for light if it has one attached. I wouldn't guess at this. I only see one cable. There should be one for line power (mains) and one for the load (the fan)

    Sorry, I can't see enough of actual circuit to say for sure. Normally, a fan rated dimmer is used in place of the wall switch. This is located on the fan itself, or the wall? the cable is coming from the fan load itself, or the household circuit? What is the fan voltage, 240v?
