Remote controlled boat

Hi! I'm up for a big project this time: a model boat.
The first thing I need is to understand how the remote control works. Ever seen those HUGE remote controlles for model airplanes with those big anntenas? this is what I'm thinking about. My question is how can I transmit information like speed (i.e. potentiometer resistance) and on/off (i.e 0/1).

Thanks for the links Ante!

I haven't got as far as speed control, one Idea I've had is to use a DTMF dialler and decoder chip connected to a transmitter and receiver respectively. I could then transmit 4-bit binary numbers and get it to turn motors on and off forward/reverse etc.
